Even more impressive is that it's performing way better than expected when it's cooler in my kitchen (68-70). It's very happy in the oven when it's below 65 in the house (with just the oven light on). Can't wait to bake with it!! Get you some! I made some very tasty waffles using the 1st discard courtesy of the vendors recipe. My first loaf was a delicious whole wheat sourdoug. The Beast promises to be a lot of fun.
