For the professional chef or the home cook. Get one of these!
2 of 2 found this helpful I purchased and received the 900-watt Anova Culinary A3.2-120V-US Sous Vide unit. That same day I cooked an Italian beef roast for 24 hours in a water bath. It turned out tender, juicy and perfect! I adapted Jeff Mauro's recipe from the Food Network website.
Since then, I have successfully cooked two pork roasts (turned them into pulled pork) and some amazing sous vide New York steaks.
If you don't have one of these in your kitchen, get one! This is the same model that was shown on one of the latest Good Eats: The Return episodes "Immersion Therapy" with Alton Brown.
I use a 22-quart Tramontina stock pot filled with about 4 gallons of water (you can use one of those square, plastic tubs, too) covered with an Everie silicone lid. I started with hot tap water and it was heated to the proper temperature in about 15 minutes. The Anova held the precise temperature throughout the entire cooking period within 1/10th of a degree.
