Channeling My Grandmother
Pickling was a passion of my grandmother. She spent hours in the garden harvesting her cucumbers, hours slicing them, hours soaking and rinsing them, and hours over a hot stove pickling them, and hours canning them. Pickling lime was a big part of the process, and it makes the pickles crisp. She passed away in 1988, and I've only had those pickles once since then. I attempted to make her pickles about 8 years ago for the first time, and realized what a time commitment this project was. However, these days, lime is not recommended anymore as an ingredient for pickling. It can lead to food poisoning if you don't properly rinse all remnants of the lime from your pickles. But, if you are careful, rinse and rinse and rinse and rinse, you can still use it. It requires heavy duty monitoring to insure it doesn't remain on your products. So, if you are willing to take the chance, and have the time commitment, it's definitely worth it. And my lime purchase was a big success!
