It works very well without pairing with the Garmin Connect app on your phone.
I had known that Garmin watches can also be used without pairing with a phone. So, I decided to buy the Instinct for a good price and use it without pairing it with a phone. First of all, I'm not sure if it works with the new Garmin firmware update. So, maybe if I connect my Instinct watch with the Garmin Connect app on my phone, it might malfunction. By the way, I can use my GPS Instinct watch for all activities even without pairing it with a phone. Please give it a try! :-)
