Carbon steel rusts!
It's a simple fact. I have many carbon steel knives and if you do not properly care for them, they all will rust. That being said, I love them all. I know how to take care of them and they take care of business for me. 1095 High Carbon steel sharpens easily, holds an edge very well and will last a lifetime if properly cared for.
After use, simply wash the knife, dry it well, and maybe put a little vegetable oil or food grade mineral oil on the steel.
If that is too much of a hassle for you, then stick to stainless steel knives. But don't bash carbon steel knives just because you don't or won't properly care for them.
